Crispy Salmon with Sage Leaves
Serves 4

This is a very tasty way to prepare salmon. Serve it simply on a bed of roasted spaghetti squash or mashed sweet potato. Broccoli or asparagus also compliment the salmon.

  • 2 Tbsp. ghee
  • 4 wild salmon filets, 6 ounces each, skin removed
  • 12 fresh sage leaves
  • Sea salt, freshly ground pepper

Gently press sage leaves on the top of each salmon filet.

Cooking the salmon:
With the heat on medium-high add 2Tbsp. ghee to the skillet. Place the salmon, sage side down in the hot skillet, and cook about 3 minutes. Turn the salmon over and cook about 3 more minutes until done. Salmon should still be slightly pink and moist. Immediately remove to a platter and serve.

Wrap 1 slice of turkey bacon around the filet securing it with a toothpick on each end.

Enjoy it!
